The Lab: The goal of roasting and preparing great coffee is a moving target. We chose to call our shop a "lab" because we embrace the never-ending experimentation and tweaking of variables to make tiny, incremental changes and improvements to how we do things. We currently don't have all the answers, and run from anyone in the coffee business claiming such. We prefer open-mindedness, experimentation, and improvement over pretentiousness. We love sharing what we've learned with our guests and friends, and believe that roasting and preparing delicious coffee honors the hard work that goes in to farming, harvesting, and processing before we get it.
